Unlike the MC decaf (Methylene Chloride), this coffee uses a water process to remove the caffeine from the green beans. It is slightly pricier than MC decafs, but uses no chemicals in the decaffeination process. The method is said to retain more of the regional profiles of an origin and we think a Mexico Chiapas stands out as a decaf favorite for its taste and quality.
