Congo coffee is somewhat overlooked by many folks but is an excellent origin for any roaster. This coffee hales from the Lake Kivu region where the high elevation, lake moistures and volcanic soils create a thriving environment for Arabica varieties. The outcome is a coffee with a full body, a stronger acidity and flavor notes of blueberry, dark chocolate and rasberry. 

Congolese coffee has improved dramatically over the years with improvements in its milling, infrastructure and export quality. While somewhat overshadowed by other African origins, we think this organic coffee merits a place in every roasters arsenal.
